Not only will you learn the techniques behind miso-making, but you’ll also take home your very own batch of miso. With a fermentation period of approximately six months, you can look forward to enjoying the delicious results of your efforts!

Miso is a traditional Japanese seasoning made by fermenting soybeans with salt and a specific mold called koji, made from rice, barley, or soybeans. The result is a thick, flavorful paste that is rich in umami. It is a versatile ingredient used in soups, marinades and dressings, offering a savoury depth to various dishes.

Vankoji founder Tonami will share her expertise and answer all your questions, providing valuable insights into the nuances of miso-making.  You'll gain a comprehensive understanding of the ingredients, tools, and techniques involved, empowering you to recreate this traditional craft at home.
